Pink Oyster is the showstopper of the oyster mushroom world. Vivid coral-pink clusters with a bold, slightly smoky flavour and a meaty texture that crisps up beautifully in a hot pan (think mushroom bacon!). It's also one of the fastest fruiters of any variety, which makes it incredibly satisfying to grow, especially for beginners. If you want a mushroom that goes from pins to harvest in the blink of an eye and looks incredible doing it, Pink Oyster is your variety.

One important thing to know: Pink Oyster is a tropical species and is strictly a warm-weather grow. It will not fruit in cold conditions and will stall or fail if temperatures drop below that 16-18°C range. In Queensland this still falls in the autumn/ winter range of temperatures, especially if you're growing indoors so keep that temperature in mind when choosing when and where to grow. It also has a shorter shelf life than other oysters once harvested, so cook it fresh within a day or two for best results!

This spawn is produced on-site at Urban Valley using Australian sorghum grain, autoclave sterilised at 121°C and inoculated under sterile lab conditions. Sorghum's small, round grain structure means excellent mycelial distribution and faster colonisation.

Storage: Keep in a cool dark place until ready to use. Do not refrigerate or freeze. Much like Queenslanders, Pink Oyster mycelium really struggles to handle temperatures below 10°C.

Best used by: Within 4-6 weeks of receiving for best results. Break grains apart in bag before inoculation.

Grow conditions:

  • Substrate: Compatible with straw or supplemented hardwood
  • Colonisation: 20 to 24°C, 2 weeks
  • Fruiting: 16 to 28°C, 85 to 95% humidity, indirect light, good airflow
  • Fruiting time: 5-10 days
  • Note: Pink Oyster loves the warmer months and is one of the few varieties that can grow well in spring and summer. The warmer it is, the faster it grows, with harvests in as little as 5 days. It can be tough to know when it's ready for harvest so when colour drops from dark pink to light, don't wait any longer.
